Greek-Style Yogurt Flan, also known as Greek Yogurt Panna Cotta, is a creamy and delicious dessert that combines the tanginess of Greek yogurt with the sweetness of a traditional flan.
Grease a 23cm/9in flan dish. Seal the biscuits in a thick polythene bag and crush lightly with a rolling pin to make coarse crumbs.
Put golden syrup and butter in a large saucepan and heat until butter melts. Stir in biscuits crumbs. Press the mixture into the base and sides of the, flan dish. Chill for 30 minutes.
Meanwhile, dissolve the gelatin in a tbsp. of water, according to packet instructions. Put the yogurt and 2 tbsp. honey in a bowl. Stir in the lime rind and juice. Add the gelatin and stir until well combined. Chill for 15 minutes, or until nearly set, then spoon over the biscuits base.
Meanwhile, finely chop the apricots. Just before serving, sprinkle the flan with the chopped apricots and the flaked almonds. Drizzle over the remaining honey and serve.
In step 2 press the biscuits crumb mixture into the dish while it is still warm. If you allow it to cool, it will become too hard.
This indulgent flan is best served after a light main meal. For the main course, try a Greek- style salad made with sliced onion, tomatoes, cucumber, olives and feta cheese.
