Although whole meal  bread is full of goodness, mass- produced loaves may contain various additives. Choose organic bread for a healthier option.

Step by Step Methods

    Heat a pan until hot. Add the breadcrumbs and sugar and cook for 15-20 minutes, stirring occasionally, until the bread-crumbs are golden brown and the sugar is caramelized. Remove pan from heat. Allow mixture to cool, then break into small pieces.

    Put cream in a bowl. Stir in vanilla essence and the breadcrumbs pieces. Transfer to a rigid plastic container. Cover and freezer for 2 hours.

    Remove the ice cream mixture from the freezer and whisk well. Return to the freezer and freeze for a further 6 hours, or until firm. Serve with cream, decorated with mint.

Tips & variations

  • Don't worry if the bread crumb mixture becomes sticky and lumpy in step 1. Stir it occasionally to break up any lumps and prevent bumping, Don't stir the mixture too often, or it wont caramelize properly.

  • For extra flavor, add a few chopped pistachios with the breadcrumbs in step 2

  • This classic ice cream makes the perfect finale to a Sunday lunch of roast lamb, roast potatoes and steamed broad beans.

  • Demerara sugar is golden brown sugar with large, sparkling crystals. Its crunchy texture makes it especially suitable for toppings and cake decorations.
