Weighting and Measuring

Be accurate correct proportions are essential to success. Use scales or measuring cups and spoons. You cannot obtain good results by guessing quantities although with experience you may learn to judge many quantities by sight.

Get to know how much your cooking bowls cups and jugs hold and then you will be able to weight and measure without scales. Flour the spoon to measure golden syrup etc. Mark packets of cooking fat into ounces for easy measuring. In most recipes one tablespoonful means one spoon filled as much above the bowl as there is in the bowl so that one level tablespoonful equals half of this amount.
