Step by Step Methods

    In a large heat proof bowl, whisk together the eggs and sugar until light and creamy. Sift in the flour and cocoa and fold in gently.

    Heat the milk in a pan until nearly boiling, then whisk it into the egg mixture. Return mixture to pan. Cook for 2-3 minutes, stirring constantly, until a thick custard forms. Pour into a bowl. Cover surface of custard with non-PVC cling film. Allow to cool.

    Meanwhile, finely chop chocolate and cut marshmallows into pieces. Fold from age frais into the cold custard, then fold in marshmallows, chopped walnuts and chocolate.

Tips & variations

  • When cutting the marshmallows, use a sharp knife and it it regularly in boiling water to prevent them sticking.

  • If preferred, use hazelnuts or pecans instead of walnuts. You can use plain chocolate chips instead of the plain chocolate.
