These delicious fried rolls are filled with mechouia salad – a spicy grilled and chopped vegetable salad, with tuna, eggs and olives, traditionally served in Tunisia. For the very best flavour, grill the vegetables over a hot barbecue. The recipe makes double what you need to fill the rolls, but it keeps well for several days in the fridge and makes a lovely dip.
